Vegan Cauliflower Soup

How to make Vegan Cauliflower Soup?


8 cups of chopped cauliflower

4 cups of vegetable or chicken broth

2 cups of water

1 medium onion chopped

1 clove of garlic minced

1 stalk of celery chopped

1 tablespoon of butter

1 tablespoon of olive oil

1 teaspoon of finely chopped green onions

½ teaspoon of salt

½ teaspoon of ground pepper



This vegan cauliflower soup recipe requires 45 minutes of active preparation. The vegan cauliflower soup can be made in advance and refrigerated for up to 4 days or frozen for up to 3 months.



  1. First heat the butter and oil in a large pot until the butter melts.
  2. Then add the onion and celery and cook until softened stirring occasionally, approximately 4-6 minutes
  3. Next add the garlic and continue cooking for half a minute.
  4. After add the cauliflower, the water, the broth, the salt and the pepper
  5. Bring the mixture to a simmer over medium high heat
  6. Reduce the heat but maintain the simmer until the cauliflower is tender, approximately 8 minutes
  7. Finally, puree the soup using use a hand-blender or immersion blender in the pot to blend the soup to perfection. Alternatively, cautiously puree in a blender in small batches.
  8. Serve and garnish with the green onions.
